       L-(+)Sodium glutamate is the main component of food flavoring monosodium glutamate, which is a kind of sodium glutamate salt formed by sodium ions and glutamate ions. It is a colorless and tasteless crystal at room temperature. It dissolves at 232 ºC and is easily soluble in water (solubility: 74g/100ml). Sodium glutamate is widely used as food flavoring agent, which can be used alone or in combination with other amino acids. It can be used in food to enhance fragrance.

 Function

       Monodium glutamate has a strong meaty umami taste. The umami taste can still be felt when MSG is diluted to 3000 times with water. It is widely used in households, catering industry, and food processing industry (soup, sausages, fish cakes, spicy soy sauce, canned food, etc.). In addition to MSG, commonly used food flavoring agents include sodium aspartate, sodium inosinate and sodium guanylate.
